Chiefs Restaurateurs of Saint-Martin
We welcome all culinary professionals who meet our eligibility criteria :
- Have at least a cooking diploma or recognized experience in international, traditional metropolitan or Creole cuisine ;
- Working mainly with fresh products ;
- Have professional room service ;
- Use at least three local products in the preparation of dishes and cocktails ;
- Be in compliance with the hygiene and health rules in force ;
- Do not use any semi-prepared product or dish prepared outside the restaurant.
You can
- Freeze raw fresh products by the restaurateur in compliance with the cold chain and the obligation of traceability mentioning the dates ;
- Use fresh, raw frozen products ;
- Buy products in mainland France, the European zone as well as in the United States, taking into account the geographical location of Saint-Martin and the very low rate of local producers.
You cannot :
- Use any semi-prepared product or dish prepared outside the restaurant.
